I aspire to be in DRDO in future. But right now I don't think there is any stream in "Defence Technology" in the institute. Is this correct?

That is correct, IITM does not offer a BTech or MTech programme in Defence Technology as of yet.
However, several students take electives in their respective disciplines that are relevant to defence technologies including Gas turbine combustion (in aerospace), radar and antenna design (in electrical engineering), etc.
