Which courses will be replaced by AI? Considering the growing impact of AI in every discipline, should I join the department of Mechanical Engineering?

None of the core disciplines will be replaced entirely with AI. You would need people trained in mechanical, civil, etc. AI will enable all disciplines to do their jobs more effectively and efficiently. Hence you would have to learn to use AI appropriately in your domain.
